Sure, he's trying to eat healthy, but that didn't stop Chef Art Smith from munching down his fried chicken and fried green tomatoes, and sipping wine when he lunched with reporters and bloggers at his Washington restaurant, Art & Soul, last week. So we had to ask — what's the secret to losing weight? — since Smith famously lost 85 pounds last year to reverse a diabetes diagnosis. Here's what he said:

1. Drink more water: "When I got here I couldn't get into the pair of jeans I'm wearing now, and I started drinking water and I started running around, I have no problem now."

2. Oatmeal in the morning, greens all the time: "Greens and oatmeal will set you free, real free," Smith said laughing.

3. Carbs for lunch, not for dinner: "I think you eat them at a certain time of day...don't eat them for dinner."
